Finally got to making these, and were they ever great. Who'd have thought these were full of chickpeas? Indeed they are, and no one will ever really notice. ;)
Forewarning: these might not last very long, and you might want to do a double batch.
Did I mention? They're free of wheat, dairy, and refined sugars, and yet still full of flavor, gooeyness, chocolate...all the good stuff ;) This recipe comes from Monique at Ambitious Kitchen- many thanks!
You'll need:
1 can (400ml) chickpeas, rinsed (keep that aquafaba/beany water for meringues/mayo).
1/2 cup your choice of nut butter (I used peanut)
1/3 cup maple syrup
2 teaspoons vanilla extract
1/2 tsp salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup chocolate chips/chunks*
Coarse sea salt, for sprinkling
*I prefer chopping up chocolate bars for different chocolate shapes and sizes. For this I used 70% dark chocolate & more than the recipe called for ~ 60g.
How-To:
Preheat oven to 175C.
Grease a pan of choice- 6-8" (not a huge amount of batter).
Throw everything into a blender, aside from chocolate, & blitz until smooth. Transfer to a bowl and fold in chocolate chunks/chips.
As Monique rightly says, you can stop here, and just eat as is - divine, or carry on with the intended baking ;) :
Pop the mixture into your greased pan, straight into the oven, bake for 20-25 mins.
Allow to cool at least a few minutes, and do share ;)
Et voila- c'est tout!
PS: Would be fabulous a la mode, with a simple banana ice cream (which I did make with the school-kids recently, which they did totally love. Will blog that soon too).
I know, it totally looks like a ginormous chocolate chunk cookie..So let it be ;)
Enjoy~
