At long last, I did it- made the plant based parmesan, and have to admit, I dig it.
Here's the recipe by lovely Jane over at Jane's Healthy Kitchen.
Based on other dairy free stuff I've been playing with, the recipe made complete sense.
Admittedly, it needs a tweak, and not because of Jane's recipe, but my own haste in wanting to make it so quickly. In any case, testing is fun, and delicious, right?
So far I've been pleased with this plant-based addition on a few items. My favorite is to grate it atop my apple chutney, on a lovely piece of bread. Easy ;).
