Carrot & Apple "Pudding"

What do you do with carrot and apple pulp after juicing?

Weeeeeeell, you could heat up some coconut oil,

add a generous amount of freshly ground cardamum, 

and cinnamon, 

a pinch of salt,

some almond butter,

along with a splash of coconut milk, 

a handful of raisins, 

whatever else your heart fancies, - pine nuts, slivered almonds, pistachios...etc

throw in a few spoons of the pulp

and a dollop of love, 

-but of course!

..or, you could just compost it. 

I was pleasantly surprised by this little delight, especially as it took about 4 seconds to make. Dad would love it, as he's a big fan of rice pudding, and I kid you not, with all that cardamum, it's a close runner up, despite it's appearance. And, I wasn't even trying to make this plant-based.
