Plant-based Veggie Fritters with Chickpea Flour (Recipe)



Here's a simple recipe for veggie fritters, using chickpea flour to marry all the ingredients together for the perfect union of tasteful bliss- otherwise known as party in your mouth. Of course, feel free to change it up as per your liking, and most importantly, just have fun in the process. Deal? ;)


Basic Vegetable Fritters:

Dry

1 cup Chickpea flour (aka besan)

pinch of salt

pinch of turmeric

1/2 tsp baking powder

1/2 tsp black pepper

1/2 tsp smoked paprika


Wet

1 1/2 cup cooked mashed sweet potato

Bunch of parsley (or coriander, or both)

1 cup grated and drained courgette - keep water on hand for combining dry and wet ingredients

1/2 cup spinach (gently wilted on warm pan)


NB: You want about 3cups veg : 1 cup flour, so feel free to switch up the vegetables to whatever you have on hand.


Start by grating courgette. Place in bowl, with a good dowsing of sea salt, mix through and set aside whilst prepping other veggies.

Boil and gently mash sweet potato.

Place approximately 2cups of spinach on a warm pan (no water/oil), cover with lid and allow to wilt.

Chop herbs (and spinach, if need be).

Back to courgette~ should be fairly wet by now. Place on a clean tea towel and drain off excess juice, into a bowl and set aside for mixing.


Bringing it all together:

Combine all dry ingredients- mix well.

Add 3/4 cup courgette juice (adding more if needed later).

Add sweet potato, mix well.

Add rest of veggies and herbs. Should be a thick batter.


Heat up a skillet to medium, add oil of choice, pour on about a ladle's worth of batter and cook a couple minutes each side.


Serve with your favorite sauce, mayo, dip or even maple syrup with a pinch of black or cayenne pepper, or eat them as they are.


As per the picture, I thoroughly enjoyed mine dipped in a smoked Hokkaido pumpkin sauce (before I turned it into a soup).
